Vin Jaune Château Chalon

This is a benchmark example of Jura’s iconic Vin Jaune. Savagnin is fermented then aged for a minimum of six years in old barrels without any top-ups. As a result, around a third of the wine's volume evaporates and as that ullage increases, a complex layer of yeast flor forms above the wine, inhibiting greater oxidation and adding a unique yeast character to the wine. The result is a powerful, concentrated, complex wine, with great minerality, much higher acidity than fino sherry, and characteristic aromas of nuts and dried fruit, with ageing potential north of a century.

Vineyard & Vine Age:  Bull Swamp and Manilla vineyards in Baw Baw Shire. The vines were planted in 1961 and and 1964 respectively.

Cellar: Domaine Tissot Vin Jaune Château Chalon is spontaneously fermented with indigenous yeast in neutral French oak barriques. It ages at least six years in old barrels without top-ups. Bottled unfined and unfiltered, showcasing its distinctive yeast-driven complexity.

Vineyard:  Domaine Tissot Vin Jaune Château Chalon comes from biodynamic vineyards at 250–450 meters altitude. The vines are planted using the selection massale method and grow in clay and calcareous soils, shaped by the cool continental climate of the Jura region.
