Vineyard & Vine Age: The vineyards stretch across 45 hectares on gently rolling ground, rooted in a mix of clay-gravel and clay-limestone soils that suit both Sauvignon Blanc and Sémillon well. The white vines average around 30 years of age, planted at high density (7,200 vines per hectare). Farming is environmentally focused and certified HVE since 2017, with organic and biocontrol practices, no herbicides, and careful canopy work done by hand. Harvest is entirely manual, with berry selection in the vineyard and again at the sorting table. Sauvignon Blanc picked from early to mid-September, followed by Sémillon a few days later.
Cellar: Fruit is cooled immediately after harvest, then gently pressed using a slow pneumatic press under inert gas, working with whole or destemmed bunches depending on the parcel. After cold settling, fermentation takes place in a mix of oak barrels and oak vats. The wine is aged for ten months on lees with regular stirring, using about 25% new oak in 225- and 400-litre barrels.
