Bondar Wines

Junto, meaning 'together' in Spanish, is a Southern Rhone style blend of Grenache, Syrah, and Mourvèdre (with a splash of 2% Cinsaut in this vintage) that is built in the most unpretentious, easy drinking, bistro-style possible. The Grenache leads the blend with its pretty red fruits and perfume, and the other varieties help to 'complete' the wine, elevating it to a more complex and balanced place. The main contributors to this are the Shiraz which adds flesh, and the Mataro which gives savoury spice and some structure. The fruit is all picked by hand, is handled gently in the winery, and is fermented and aged in old oak.

Effusive blue- and red-fruit allusions teem along rails of gentle tannins, a burr of whole-bunch spice as seasoning. A sweep of maritime salinity at the finish. Vineyard & Vine Age:  The Grenache is culled from three separate blocks: the lion’s share is from Bondar's own Rayner Vineyard with the balance coming from the Trott Wilpena and Slattery Vineyards in Blewitt Springs. The Shiraz is also home-grown Rayner fruit (70-year-old vines on sand), while the Mataro was sourced from a grower in the foothills of Willunga on the famed Kurrajong soils. The tiny addition of Cinsaut was drawn from young plantings in the Rayner vineyard. Hand-harvested. Organic conversion.
