Vineyard: Grapes are sourced from low-yielding vines (~70 q/ha) and hand-harvested in late September and early October. The vineyards are planted on south–southeast facing slopes with marl and sandstone-calcareous soils.
Cellar: After sorting, the fruit undergoes a brief cryomaceration to lift the aromatics before being racked to stainless steel, where it ferments over 20–25 days. ~18,000 bottles produced.
