Taburno Sannio DOC Fiano

Fiano is one of those southern Italian grapes everyone forgets about until it’s in the glass. Always the bridesmaid, never the bride, yet somehow the one you end up talking about all night! The old Latins called it Vitis Apiana because the bees couldn’t stay away, and there’s still that gentle sweetness to its perfume.

ABV:  13%

Vineyard:  Fiano from low-yielding vines (70q/ha), hand-harvested in late September and early October. About 18,000 bottles produced.

Cellar: A brief cryomaceration lifts the aromatics, followed by a slow 20–25 day fermentation. The result is a quietly expressive Fiano: white peach, soft florals, a touch of exotic fruit, and that gentle hazelnut note on the finish, held together by bright, clean acidity.
