This lacks no gravitas when you consider the family story behind Ejamu, and it comes through in the glass with this stunning white blend of Manzoni Bianco with the local pink mutation of Trebbiano, and a splash of that ancient peach-laden Malvasia. This is a crystalline, shimmering beauty of a wine. On the nose, lemon yogurt with a hint of fresh leafy herbs, lime, and pineapple rind. The palate shimmers with surprising concentration, well balanced acidity, and a broader texture than expected. An almond like note on the long, lemony finish gives that classic Italian white wine indicator. This is a precious drop perfect for serious Italian wine lovers and Italian wine lists alike.

Vineyard:  Ejamú Parresìa Bianco comes from organically farmed estate vines at 300-325 meters, hand-harvested on sandstone hillsides with excellent drainage. The moderate Mediterranean climate shapes a wine that reflects its sandy, rocky soils and elevated origins.

Cellar: Grapes for this wine are hand sorted, destemmed, softly pressed, and each variety undergoes separate low-temperature stainless steel fermentation. The wine rests six months in stainless, with biweekly racking and lees-aged Manzoni, followed by three additional months in bottle.
