Fermentation:  After being thoroughly sorted and destemmed, the grapes are softly pressed. Each variety is fermented separately in stainless steel at low temperatures.

Ageing:  6 months in stainless and at least 3 months further in bottle before release. Racked every two weeks. The Manzoni remains on its lees with bâtonnage.

Vineyard & Vine Age:  Organically farmed estate vineyards. Hand picked.

ABV:  12.5%
