Vineyard:  The Asolo DOCG vineyards at 800-900m, on calcareous Morainic marl-clay soils rich in minerals, are double arched cane trained and hand harvested in small cases the last week of September to prevent crushing, preserving fruit integrity.

Cellar: Hand-picked grapes from Asolo DOCG vineyards are softly pressed and undergo anaerobic fermentation in temperature-controlled stainless steel. Secondary fermentation follows in a Martinotti tank under pressure for at least forty days, with a dosage of 14g/L at bottling.
