2022 Arbois AOC Savagnin Ouillé
2022 vintage: Savagnin Ouillé opens with an immediately expressive bouquet, fresh yet enveloping, of preserved lemon, yellow peach, and mango, layered with chamomile, thyme, sage, and a faint balsamic lift. On the palate, it is dense but energetic, broad-shouldered yet precise, unfolding quince and citrus oils over a superb, structuring acidity and a fine saline thread. The finish is long and savoury. Still young, with clear cellar potential. Drink through 2036. Abv: 13.0%.

Vineyard & Vine Age: Savagnin Ouillé is produced from 1.5 hectares of estate-grown vines on Triassic clay with an east-facing exposure. Vines are 25 years old, planted at 7,000/ha. The vineyard is farmed organically since 1999 and biodynamically since 2004 (Ecocert, Biodyvin), with treatments limited to sulfur, copper, plant infusions, and estate compost.
Cellar: Grapes were hand-harvested and pressed whole-cluster with a pneumatic press. Fermentation occurred spontaneously in 600-litre demi-muids. The wine aged 24 months on fine lees, with regular topping every 10 days, and was lightly filtered before bottling. No sulfur was added during winemaking; total SO₂ ≤ 15 mg/L.

What the Critics are saying: "The bottled ouillé 2022 Savagnin from Arbois, of which I had tasted some components the previous year, contains wine mostly from Trias clay soils, vinified, aged and bottled without added sulfur. It's ripe without excess, quite fresh and balanced for the year, coming in at 13.5% alcohol and displaying a yellow, almost fluorescent color.
