Macvin du Jura Blanc

Macvin is one of those beguiling, off-beat styles of the Jura that makes wine come alive all over again. It is a Chardonnay & Savagnin based dessert wine that has been fortified with Marc, the French version of Grappa, a distillate of the re-fermentation of the grape skins left over from wine making (Piquette). The wine must then be aged in oak for at least six years before release. Just imagine a wine of this kind in the hands of Stéphane Tissot. It is a rare treat, a curio that will end any meal with panache and fireworks. It bursts with candied orange peel, baked apricots, marjoram, and baking spices, its sweetness balanced beautifully by the Jura's signature saline tang and statuesque acidity. The marc element leaves the palate with a subtle, vermouth-like bitterness that keeps you leaning in. A must-try.

Cellar: Domaine Tissot Macvin du Jura Blanc is spontaneously fermented with natural yeasts and fortified early with house-made Marc to preserve natural grape sugars. The wine is aged at least six years, and bottled unfined and unfiltered, with no added SO2.

Vineyard:  Domaine Tissot Macvin du Jura Blanc comes from biodynamic estate vineyards at 250–450 meters altitude. The approximately 30-year-old vines, planted via Selection Massale, grow in clay and calcareous soils, hand-farmed and harvested in the cool continental climate.
