Les Bruyères

Les Bruyères is a south facing plot on clay and blue marl, planted with selection massale, with vines as old as 80 years old mixed in with new selected shoots planted at wild densities to generate competition between the vines (while each vine is culled to produce only two or three bunches of grapes for concentration). Drink now or age 10-20 years. Decant one hour, serve at 10-12ºC.

Vineyard & Vine Age:  Bull Swamp and Manilla vineyards in Baw Baw Shire. The vines were planted in 1961 and and 1964 respectively.

Cellar: Domaine Tissot Les Bruyères is spontaneously fermented with indigenous yeast. The wine is aged 24 months in French oak barriques on the lees, bottled unfined and unfiltered, highlighting the expression of its clay and blue marl terroir.

Vineyard:  Domaine Tissot Les Bruyères comes from biodynamic vineyards at 250–450 meters altitude. The 45- to 80-year-old vines, planted using selection massale method, grow on clay and blue marl with Triassic schist marls, producing low yields and concentrated wines.

Cellar: Domaine Tissot Les Bruyères is spontaneously fermented with indigenous yeast. The wine is aged 24 months in French oak barriques on the lees, bottled unfined and unfiltered, highlighting the expression of its clay and blue marl terroir.
