A single varietal Crémant du Jura revealing in sparkling form Stéphane Tissot’s masterful grasp of Chardonnay. From 25 year old biodynamically farmed vines planted selection massale from a 1.3 hectare plot made up of 60% Triassic clays and 40% Bajocian limestone. Aromas of crisp apple, lemon, pear with hazelnut, brioche, camomile on the nose. Pure and dense on the palate with juicy orchard fruit with brioche & yeast notes, juicy acidity, creamy texture, lively mineral on the finish.

Ageing:  Traditional Method. At least five years on the lees in bottle before disgorgement. No dosage. No SO2 added.

Vineyard & Vine Age:  Biodynamic. 1.3 hectares made up of 60% Triassic clays and 40% Bajocian limestone. Selection Massale.
