A single varietal Crémant du Jura revealing in sparkling form Stéphane Tissot’s masterful grasp of Chardonnay. From 25 year old biodynamically farmed vines planted selection massale from a 1.3 hectare plot made up of 60% Triassic clays and 40% Bajocian limestone. Aromas of crisp apple, lemon, pear with hazelnut, brioche, camomile on the nose. Pure and dense on the palate with juicy orchard fruit with brioche & yeast notes, juicy acidity, creamy texture, lively mineral on the finish.

Vineyard & Vine Age: Domaine Tissot BBF Blanc de Blanc Brut Nature comes from 1.3 hectares of biodynamic vineyards at 250–450 meters altitude. The vines, planted with selection massale method, grow on soils of 60% Triassic clays and 40% Bajocian limestone.

Cellar: This wine is spontaneously fermented with indigenous yeast. It ages at least nine months in French oak barriques before secondary fermentation. Finally, it ages five more years on lees in bottle, with no dosage or SO2 addition.

What the Critics are saying:  "We tasted again the NV Crémant du Jura Extra Brut Blanc de Noir BBF (2020-2021), a blend of 50% wine from 2021 and 50% wine from 2020, with the base wine aged in barrique until blended and put in the bottle to referment with indigenous yeasts. Everything comes from his own vines. The labels show the disgorgement date, so it's possible to differentiate the different bottlings. This disgorgement spent nearly three years with lees in bottle, and the blend was 60% wine from clay and marl soils and 40% from limestone. It's meaty and has some red berry aromas and a pungent mouthfeel, and it's vibrant and with good acidity, very tasty, almost salty." 93/100, Luis Gutiérrez, Robert Parker's Wine Advocate, Sep 11 2025
