2022 Pouilly-Fumé AOC Kiméride

This cuvée comes from a carefully selected parcel on Kimmeridgian limestone soils. It’s a Pouilly-Fumé of richness and concentration, yet elegant, with intense aromas of ripe fruit, capturing the very essence of Sauvignon Blanc.

"The nose expresses a distinguished minerality (limestone, dry stone and a slightly smoky touch of flint), pronounced aromas of passion fruit, kiwi, gooseberries, as well as notes of crushed green apple, white nectarine and elderflower, combined with a delicate hint of toast in the background. The palate offers concentration, density and a lively and salivating acidic structure. We find flavours of gooseberry, passion fruit, tangy kiwi, green apple skin, crushed green apple, as well as a touch of elderflower and a racy limestone and smoky minerality. In the finish, we also have a refreshing and pleasant vegetal (cucumber) and herbaceous (cut grass) touch, wrapped in the gourmandize of white peach." - Magazine Vert de Vin n°26

Vineyard & Vine Age: Kiméride Pouilly-Fumé 2022 comes from a selection of parcels on Kimmeridgian limestone soils, where the stones are scattered with fossils such as ammonites and small oysters. Only the best vintages and mature vines are used for this cuvée. The vineyards are carefully managed with regular tillage, spring debudding to control yields and improve airflow, and targeted leaf removal in summer, adapted to each parcel and vintage.

Cellar: Grapes are vinified in stainless steel with partial skin contact. Pressing is very gentle, followed by careful sedimentation of the must to enhance finesse. Fermentation takes place under temperature control, and the wine is aged 6 to 9 months on fine lees in stainless steel tanks, with regular stirring to build texture and complexity. The different parcels are blended in spring before bottling.
