Vineyard & Vine Age: This Pouilly-Fumé is a blend of parcels rooted in classic limestone-driven terroirs, including white limestone pebbles known as Caillottes, Kimmeridgian marls rich in fossilized oysters, clay-limestone, and flint (silex). The vineyards are worked with regular tillage, spring debudding to regulate yields and improve airflow, and targeted leaf removal in summer, adapted to each terroir and vintage.

Cellar: Grapes are vinified in stainless steel with partial skin contact using only the berries, followed by very gentle pressing and careful settling of the must. Fermentation and ageing take place in temperature-controlled tanks, with six months on fine lees and lees stirring until Christmas. The different terroir cuvées are blended in spring before bottling.

Winemakers Note:  A rich nose with citrus and yellow fruit notes (grapefruit, yellow peach, pineapple). These same aromas carry through to the palate, which is fresh, fruity, full-bodied, and beautifully balanced.
