2018 Chinon AOC La Singulière
2018 was a bold, solar vintage with great ripeness.

Vineyard & Vine Age: La Singulière comes from a single parcel of Les Picasses known as Vaux, planted to 40-year-old certified organic vines. The site sits on a gentle south-facing slope in the Puys du Chinonais, north of Chinon and east of Avoine, descending from 65 to 50 metres above sea level. The soils unfold with the slope, Upper Turonian yellow limestone at the crest, classic Chinon millarges with calcareous shell-bearing sands through the mid slope, and a narrow seam of Middle Turonian white chalk at the base.
Cellar: La Singulière starts out being made identically to the Picasses bottling: the bunches are destemmed with the berries left whole and fermented with indigenous yeasts in tank; the maceration is similar at about a month. La Singulière is the only Raffault wine to be aged in smaller oak vessels, specifically 500-litre tonneaux on the newer side (from 1-5 years of previous use) vs. the quite old and large 30-hectoliter foudres for Picasses. After two years in wood, the wine is bottled without fining or filtering.
