2021 Chinon AOC La Cuvée OR, le Chenin des Picasses
Organic, hand harvested, whole-cluster pressed and an overnight cold settle of the must. Fermentation to dryness takes place spontaneously with indigenous yeasts in 500L second- and third-use French oak demi-muids. The wine does not go through MLF and is aged on its fine lees for a year in those same barrels, clarifying naturally during that time and is thereby bottled without filtration.
