Brut Rosé Crémant

An expressive nose of strawberry, cherry, pear, and even peach, nuanced by a whole bakery of yeast notes and a chalky minerality. Dry and easy drinking, this wine also holds onto its bubbles for an almost ridiculous length of time. Pair with foie gras in terrine, scallops, lobster, truffled poultry, or chaource cheese. A special occasion wine at a week-night price.

Appellation:  VMQ Methode Traditionnelle (because the Rosé style is not yet included in the Crémant de Limoux AOC)

Varietal/Blend:  100% Pinot Noir

ABV:  12.0%

Vineyard & Vine Age:  Bull Swamp and Manilla vineyards in Baw Baw Shire. The vines were planted in 1961 and and 1964 respectively.

Cellar: For this wine, grapes are pressed and coloured with a touch of saignée juice after two days' maceration. Second fermentation occurs in bottle, using reserved Pinot Noir must. Aged three years on lees before disgorgement. Finished with 7g/L dosage.

Vineyard:  From the high-altitude, organic parcels of Saint Pierre and Borde Longue in Roquetaillade, the grapes for this Brut Rosé Crémant are hand harvested into small crates to preserve freshness. The cool Mediterranean climate and clay-limestone soils shape its vibrant expression.
