Vineyard & Vine Age: Fruit from the one-hectare Mont Embrasé lieu-dit, on west-facing slopes north of Saint-Bris. The 45-year-old vines are rooted in Kimmeridgian clay-limestone soils with a strong limestone component and some alluvial deposits. The vines are trained to simple Guyot and harvested by hand.
Cellar: Fermentation takes place in three vessels: 30% in 600-litre oak demi-muids, 30% in concrete eggs, and 40% in temperature-controlled stainless steel. The lees are regularly stirred in the barrel, while the concrete eggs maintain natural lees suspension. The three components are then blended and aged for six months in temperature-controlled tanks before bottling without fining or filtration.
