Vineyard & Vine Age: Fruit from 3.59 hectares in the La Ronce and Breau lieux-dits of Saint-Bris-le-Vineux. The 5- to 35-year-old vines grow at approximately 200 metres on north- to northwest-facing slopes, rooted in Portlandian limestone and marl soils, including the sandy Portlandian marls of La Ronce. The vines are trained to simple Guyot and harvested by hand.
Cellar: The grapes are pressed immediately after harvest, and the must is cold-settled for 5–10 days. Fermentation takes place slowly at low temperature in stainless steel, beginning spontaneously with indigenous yeasts. The wine then ages for 6–10 months on fine lees in stainless steel before gentle filtration and bottling.
