2023 Irancy AOC

Jean-Christophe’s Irancy cuvée is said to contain 50% César, providing us with a clear picture of this historical curiosity. Now shown to be related to Corsica’s Niellucciu somehow, itself shown to be a phenotype of Sangiovese, it is wild to see this grape that was brought here by the Romans still being grown (extant on a mere 5ha in Irancy). Though hard to grow, it was kept around to bolster the colour and weight of this northerly terroir’s translucent, citrusy Pinot Noirs. Fascinating! In 2023, this cuvée was made exactly the same way as the entry level Bourgogne Côte d'Auxerre AOC, and Jean-Christophe says it shows best at 5-10 years from vintage (as opposed to 3-5), bumping the recommended service temperature to 14-16°C and encouraging us to pair this with lamb and game dishes!

Vineyard & Vine Age: Fruit from south- and southeast-facing slopes, rooted in Kimmeridgian clay-limestone soils dominated by blue clay. The vines are trained to simple Guyot and grapes are harvested by hand.

Cellar: The grapes are sorted, destemmed, and fermented in stainless steel following a 5–6 day cold pre-fermentation maceration. Fermentation begins spontaneously with indigenous yeasts at temperatures below 28°C, with light pump-overs and approximately three weeks of maceration. After gentle pneumatic pressing, MLF takes place in stainless steel. The wine then ages on fine lees for 6–10 months in stainless steel before filtration and bottling.
