Varietal/Blend: 50% Pinot Noir, 50% César

Vineyard & Vine Age: Fruit from south- and southeast-facing slopes, rooted in Kimmeridgian clay-limestone soils dominated by blue clay. The vines are trained to simple Guyot and grapes are harvested by hand.
Cellar: The grapes are sorted, destemmed, and fermented in stainless steel following a 5–6 day cold pre-fermentation maceration. Fermentation begins spontaneously with indigenous yeasts at temperatures below 28°C, with light pump-overs and approximately three weeks of maceration. After gentle pneumatic pressing, MLF takes place in stainless steel. The wine then ages on fine lees for 6–10 months in stainless steel before filtration and bottling.
