2023 Chablis AOC Les Ouches MAGNUM

This single plot in the gorgeous southwest sloping lieu-dit of Les Ouches, the penultimate site in Chablis’s southernmost reaches, perched above the aforementioned Reugny on blue clay Kimmeridgean soils features a hectare of 45+ year-old Chardonnay vines that Jean-Christophe prizes as though they were a premier cru, treating them to a more robust élevage with half of the cuvée ageing in 228L French oak Burgundy barrels (3-7th fill) with periodic bâtonnage, blending the fraction with the other half that aged in Stainless three months before bottling to fully integrate. Unfined and unfiltered, this is a vivid and fresh Chablis with great weight, ringing in at a balanced 12.5%, and best enjoyed from 2026-28, a terrific restaurant bottle-list selection that over-delivers on price.

Vineyard & Vine Age: Fruit from a one-hectare parcel in the southwest-facing Les Ouches lieu-dit. The 45-year-old Chardonnay vines grow on poor Kimmeridgian clay-limestone soils dominated by blue clay and are trained to simple Guyot. Grapes are harvested by hand.

Cellar: The grapes are pressed immediately and the must cold-settles for 5–10 days before spontaneous fermentation with indigenous yeasts, 50% in stainless steel and 50% in 228-litre Burgundy barrels previously used for three to seven vintages. The barrel portion undergoes periodic bâtonnage before the two components are blended and matured for three months in temperature-controlled tanks. Bottled unfined and unfiltered.
