Varietal/Blend: 100% Chardonnay
ABV: 12.5%
Vineyard & Vine Age: Fruit from the Vau de Pissou, Le Clou, and La Ronce lieux-dits, totaling one hectare. The 55-year-old vines grow on poor Kimmeridgian clay-limestone soils dominated by white clay, with Vau de Pissou and Le Clou on the southern slope and La Ronce on a gentler southwest-facing slope above Saint-Bris. The vines are trained to simple Guyot and harvested by hand.
Cellar: The grapes are pressed immediately after harvest and transferred to 228-litre Burgundy barrels and 600-litre demi-muids, where spontaneous fermentation and ageing take place for 12 months. The fine lees are stirred periodically, after which the components are blended and matured for a further four months in temperature-controlled tanks. The wine is bottled without fining or filtration.
