Blaye Côtes de Bordeaux AOC Boir Pour Voir Sauvignon Gris (Orange)

An avant-garde Sauvignon Gris, the 'Boir Pour Voir'—Drink to See—is an orange wine with the most gorgeous hue and from one of the finest varieties to be underrepresented in Bordeaux and often found only in its fringe appellations (like Blaye!). Sauvignon Gris is of course the pinkish-grey mutation and it gives not only colour to the wine, but its plusher nature is so well suited to this style. The nose is free of flaws with a juicy tropicality of cantaloupe, fresh herbs, orange marmalade, soursop, and most exciting of all: yellow pepper, a wonderful surprise obviously owing to Sauv Blanc’s famously nuclear payload of pyrazines. This is easily among the most exciting orange wines I’ve tasted in years.

After being foot tread, the maceration spends one month fermenting on the skins in an oak fermenting vat. It was then pressed and racked half to classic Bordeaux French oak barriques and half to concrete egg for a six month élevage. Only 1500 bottles produced. Drink to see!

Vineyard & Vine Age: Gendron hillside vineyards just east of the winery, nearing the boundary with Cognac (Fine Bois) production.

Cellar: Fermented on the skins one month in wooden fermenters, followed by six months of élevage, half the wine in a Diamant vat (concrete egg) and the other half in French oak Bordeaux barrique. Only 1500 bottles made.

Winemakers Note:  Rose, citrus, orange zest and aniseed aromas. Slight bitterness which gives a great length in the mouth. Perfect with aperitif, hard cheeses and biscuits desserts. To be served between 10 et 12°C.
