Vineyard & Vine Age:  Bull Swamp and Manilla vineyards in Baw Baw Shire. The vines were planted in 1961 and and 1964 respectively.

Cellar: The grapes for this wine undergo a 48-hour pre-ferment cold maceration, followed by traditional fermentation in concrete at 16–27°C. Délestage, remontage, or pigeage is done daily for six weeks. Aged 10 months in concrete, with minimal sulfite addition at bottling.

Winemakers Note:  Dark red color with purple tints. Powerful nose of concentrated red fruits and spices. Full and concentrated, it offers magnificent fruity and spicy aromas. Long and round finish with brilliant mouthfeel. Excellent with special dinners, braised duck, Asian spicy food.
An outstanding Cairanne, powerful, well structured, balanced, with smooth and long finish. Brilliant with special dinners, braised duck, Roasted meat and cheese.

Vineyard:  The grapes for this wine come from hand-harvested organic vineyards at 98–339 meters altitude, in a warm Mediterranean climate. The vines grow on stony limestone clay slopes with marl and rare flint, facing the Dentelles de Montmirail and Mont Ventoux.
