Stellenbosch WO Reserve Collection Syrah

Sweet plum and raspberry open things up, with violet and a softly savoury cigar box note giving it a bit more depth than you might expect at first. There’s a real ease to the palate with supple fruit that just glides along before those fine, velvety tannins come in, laced with a touch of rosemary and baking spice. The kind of bottle that seems to call for five-spice duck without asking twice.

Varietal/Blend:  100% Syrah

ABV:  13.5%

Vineyard & Vine Age:  Estate-grown fruit from a single, steep, terraced block on Tokara’s most rocky slopes, planted to two clones. Hand-harvested in two passes (18 and 28 March) at optimal phenolic ripeness. Yields ~6 t/ha.

Cellar: Grapes are hand-harvested into small crates and chilled overnight to ~6°C. Fermented with 30% whole bunch, the rest was destemmed and transferred to the tank without pumping. 4-day cold maceration before fermentation, with twice-daily pump-overs, délestage, and punch-downs. Extended maceration with spontaneous MLC, completed in barrel. Aged 10 months on fine lees, blended in tank, then returned to barrel for a further 11 months. Bottled unfined and unfiltered.
