Stellenbosch WO Limited Release Chenin Blanc

A Chenin that hits that sweet spot between texture and freshness, with a gentle barrel warmth bringing in quince paste, dried apricot, and a touch of something softly malty, while a flicker of greengage keeps it feeling alive. There’s a nice creaminess through the middle, but it’s all held together by a line of acidity and a subtle saline edge. It’s the kind of bottle you open without overthinking but end up paying attention to anyway, especially with something like salt and pepper squid, seared scallops, or even a slightly richer, sweet savoury dish like chicken with pineapple chutney.

ABV:  14%

Vineyard & Vine Age:  Estate-grown fruit from a single block at 320 m altitude on south-east-facing slopes. Soils are Oakleaf, derived from decomposed granite with a layer of crushed rock. Hand-harvested on 6 February with yields ~ 6.5 t/ha.

Cellar: Whole-bunch pressed with minimal skin contact; free-run juice only. Cold settled, then fermented spontaneously in 400L French oak. Aged 6 months on lees with bâtonnage and MLC. A small addition of Chenin Blanc Straw wine is blended before bottling, followed by 16 months of bottle ageing before release.
