Vineyard: Ten hectares of 40-year-old vines planted on ancient preglacial soils, with a mix of chalky, clay-rich alberese marl, sandstone, and alluvial deposits.
Cellar: Grapes are hand-harvested in small boxes, sorted twice, destemmed, and fermented with indigenous yeasts in open wooden vats, with gentle punch-downs by foot. Maceration lasts 10–15 days. The wine completes MLC and ages for 12 months in lightly toasted French barriques, around 5% new, followed by six months in concrete before bottling. Unfined and unfiltered, with minimal added sulfites.
