Varietal/Blend: 100% Nebbiolo

Vineyard: Grapes are selected from the youngest Nebbiolo vines and hand harvested into baskets. They are immediately destemmed upon arrival at the winery to preserve freshness.
Cellar: Fermentation occurs spontaneously with indigenous yeasts in cement tanks and lasts approximately 20 days with traditional cap management. The wine is gently pressed, completes malolactic fermentation, and spends a short period in cask before resting 12 months in cement tanks to maintain freshness. A small addition of sulfur is made prior to bottling.
