2025 Agramante Grillo

Few grapes tell the story of western Sicily quite as neatly as Grillo. First documented in Sicily in the late 1800s, it found a particularly happy home around Marsala, becoming one of the grapes most closely tied to the region’s historic wines. The family tree is pretty great too, with Zibibbo and Catarratto as its parents, two grapes that seem almost destined to produce something this happily suited to the Sicilian sun. We love Grillo’s bitter lemon, ripe pear, Thai mango, and this gorgeous scent of sage leaves warmed in the sun. Have it with arancine, a Palermo street-food classic, and for a minute you are somewhere much warmer.

Vineyard:  The grapes come from Salemi, in western Sicily, from vineyards sitting around 50 metres above sea level on medium-textured, calcareous soils. The vineyards are farmed biodynamically and are Demeter-certified, with Guyot-trained vines planted at 4,000 per hectare. Harvest is done by hand at the end of August.

Cellar: After harvest, the grapes are destemmed and gently pressed, then undergo spontaneous fermentation in stainless steel at 14–16°C for 12–14 days. The wine spends four months on its lees in tank, then rests for at least another two months in bottle before release.
