Ripe peach and apricot give the wine an immediate generosity, but with air it starts to unfold into more savoury and complex territory, picking up notes of saffron, crushed stone, and a faint petrol nuance that hints at how beautifully this wine can evolve with time in bottle. Bright acidity and a salty mineral edge keep everything lifted and precise through a long, elegant finish. Grilled fish, lobster pasta, or a wedge of blue cheese? Yes please.

Vineyard:  The vineyard is located near Cavaion Veronese in Veneto, where 29-year-old vines grow on south-facing slopes at 190 metres above sea level. Spur-pruned cordon-trained vines are planted at a density of 5,000 vines per hectare.

Cellar: The fruit is cooled overnight before whole-cluster pressing without destemming. Spontaneous fermentation takes place in cement tanks at 18 °C, followed by 12 months of aging on fine lees in cement and bottled unfiltered.
