2021 Montalto Cabernet Franc

Built for long aging, the wine carries dense but remarkably elegant tannins alongside real depth and structure. Sour cherry, blueberry, violet, and subtle licorice notes unfold slowly in the glass, giving the wine a darker, more layered profile without sacrificing freshness. Feels especially right beside charcoal-grilled meat, something braised for hours, or the sort of aged cheese you keep cutting “one last piece” from.

Vineyard:  Produced from fruit grown in the Montalto vineyard in the municipality of Rivoli Veronese in Veneto, where 30-year-old vines grow on south-facing slopes at 190 metres above sea level. Spur-pruned cordon-trained vines are planted at a density of 5,000 vines per hectare.

Cellar: Spontaneous fermentation takes place in 16hl amphora with roughly 20 days on skins and twice-daily cap management. The wine then remains in the amphora for a further 12 months before bottling unfiltered.
