Vineyard:  The vineyard in San Giorgio di Castiglione Tinella features forty-year-old vines in calcareous, sand-streaked soils. Grapes are harvested by hand in early September, with each bunch selected manually and placed in boxes to avoid damage.

Cellar: For this wine, only the best grapes are softly pressed, then cold settled naturally. Fermentation in autoclave is halted around 5% alcohol via rapid cooling. Stored in stainless steel at -3 °C. Bottled cold after sterile filtration. No malolactic fermentation occurs.
