Cellar: For this wine, only the best grapes are softly pressed, then cold settled naturally. Fermentation in autoclave is halted around 5% alcohol via rapid cooling. Stored in stainless steel at -3 °C. Bottled cold after sterile filtration. No malolactic fermentation occurs.
