Cellar: Cordero Mario undergoes partial destemming and pressing with some whole bunch fermentation. After cold maceration, it ferments in temperature-controlled stainless steel tanks with daily pump-overs, followed by malolactic fermentation and about 24 months aging in French oak tonneaux.
