Vineyard:  Vineyards at 250–350 meters altitude on hilly sites. Soils of morainic and sandstone origin with clay-rich subsoils. Vines trained in double-arched cane, harvested in September.

Cellar: After destemming and gentle pressing, primary fermentation occurs in stainless steel at 14–16°C. The wine undergoes a secondary fermentation in autoclave (Martinotti method) for a minimum of 120 days. Bottled with ~8 g/L residual sugar and rested 2–3 weeks before release.

Winemakers Note:  Color: Brilliant straw yellow, with ample greenish highlights.
Bubbles: Fine and persistent perlage
Fragrance: Very intense and persistent bouquet, fine and elegant, with pleasant floral and fruity notes reminiscent of meadow / peach flowers, golden apple, and Williams pear.
Tasting Notes: Fresh and slightly sweet, with a persuasive softness and strong flavor, all very balanced. A long and persistent finish, pleasantly fruity and aromatic.
Pairings: Excellent as an aperitif, as well as accompanied to appetizers of fish, raw and cooked fish, shellfish, soups, white meats, light dishes, and vegetables.
Serving Temperature: 6°- 8° C
