Vineyard:  Vineyards at 30–150 meters altitude on hilly sites. Soils of sandstone origin with clay-rich, sometimes gravelly subsoils. Vines trained in double-arched cane, harvested early to mid-September.

Cellar: After destemming and gentle pressing, primary fermentation takes place in stainless steel at 14–16°C. The wine undergoes a secondary fermentation in autoclave (Martinotti method) for a minimum of 75 days. Bottled with ~10 g/L residual sugar and rested 2–3 weeks before release.

Winemakers Note:  Colour: Brilliant straw yellow.
Bubbles: Fine and persistent perlage.
Fragrance: Intense, elegant, and persistent bouquet, pleasantly fruity with clear citrus notes and tropical fruit.
Tasting Note: Prestigious, elegant, and versatile. A pleasant, balanced acidity and a marked sapidity, with a touch of freshness, at the same time, are very persistent. A pleasant mineral finish.
Pairings: extraordinary as an aperitif, as well as accompanied throughout the meal with raw fish dishes, shellfish, white meats, and soups. It also pairs well with cheese or fried food.
Serving Temperature: 6°-8° C
