Vineyard:  Vineyards at 250–350 meters altitude on hilly sites of tectonic origin. Soils of sandstone and morainic composition with clay-rich subsoils. Vines trained in double-arched cane are harvested early to mid-September.

Cellar: After destemming and gentle pressing, primary fermentation occurs in stainless steel at 14–16°C. The wine undergoes a secondary fermentation in autoclave (Martinotti method) for a minimum of 120 days. Bottled with ~20.5 g/L residual sugar and rested 2–3 weeks before release.

Winemakers Note:  Color: Brilliant straw yellow
Bubbles: Fine and persistent perlage
Fragrance: Elegant and persistent bouquet, pleasantly fruity, reminiscent of Williams pear, peach blossoms, and ripe fruit.
Tasting Note: Round and silken with a soft sapidity and very balanced. A long and persistent finish, pleasantly fruity and delightfully aromatic.
Pairings: Delicious between meals, it matches easily with dry pastries, elaborate desserts, spoon sweets, fruit tarts, panettone.
Serving Temperature: 6°- 8° C
