Vineyard & Vine Age: Domaine Tissot Vin Jaune Château Chalon comes from biodynamic vineyards at 250–450 meters altitude. The vines are planted using the selection massale method and grow in clay and calcareous soils, shaped by the cool continental climate of the Jura region.
Cellar: Domaine Tissot Vin Jaune Château Chalon is spontaneously fermented with indigenous yeast in neutral French oak barriques. It ages at least six years in old barrels without top-ups. Bottled unfined and unfiltered, showcasing its distinctive yeast-driven complexity.

What the Critics are saying: "The 2017 Château Chalon plays in a different category, from some of the finest Lias soils in Jura. Stéphane Tissot loves 2017 for Vin Jaune. This is intense and nuanced, still very young and a little closed and in need of time in the glass to start unfurling the multiple layers it has. It has elegant and nuanced notes of marzipan, herbs, spices and mushrooms. The palate is intense and pungent. The wine comes in at 16% alcohol and is full bodied and powerful but keeps the elegance and balance through lots of freshness. It can be enjoyed now, or you could wait several years before opening a bottle; it should be almost indestructible. This is superb." 98/100.
