2022 Arbois AOC Pinot Noir Sous la Tour

Sous la Tour is a Pinot Noir that leaps from the glass, redcurrant, raspberry, and ripe cherry threaded with black cherry, gentle spice, and a whisper of limestone minerality, silky tannins and chiselled acidity keeping it lithe and vibrant, ready to pair with Comté, Morbier, or a warm slice of reblochon fresh from the oven, yet built to evolve gracefully over a decade, endless, compelling and utterly alive.

Vineyard & Vine Age: Sous la Tour is produced from 1.2 hectares of estate-grown Pinot Noir planted on Bajocian limestone scree with west and south-west exposure. The vines are 50 years old, planted at 7,000 per hectare, and farmed organically since 1999 and biodynamically since 2004 (Ecocert, Biodyvin).

Cellar: Grapes are hand-harvested in small crates and carefully sorted. They are fermented as whole clusters for four weeks in wooden vats without added sulfur. The wine then ages for 24 months in oak barrels. A small amount of sulfur is added after malolactic fermentation, and it is bottled without filtration. Total SO₂ remains under 20 mg/L.
