The MozaÏk Blanc brings together two plots planted with Pithon-Paillé’s flagship variety, Chenin Blanc. These two vineyards juxtapose the two main subsoils and terroirs of Anjou: the black schist of “Anjou Noir” and the white limestone of “Anjou Blanc”. This is high fidelity chenin, farmed biodynamically with utmost care, the fruit is fermented in large conical oak casks with the indigenous yeast of the vineyards and cellars, aged one year in those same oak vats, and bottled with only a drop of SO2, preserving the clear window into the ying-yang effect of wedding these two wildly different and quintessentially Anjou soil types. Best served at 11 degrees.

Ageing:  Aged one year in the same French oak frustoconical tanks. A drop of sulfur is added before bottling to preserve the purity of the wines in transit.

Vineyard & Vine Age:  A marriage of estate vineyards on black schist (Anjou Noir) and white limestone (Anjou Blanc). Biodynamic.
