2022 Blaye Côtes de Bordeaux AOC Cuvée Classique

The flagship wine of the estate, the cuvée classique of Peybonhomme-Les-Tours is a wine with centuries of history. It is hard to describe, seeing as how the fruit profile is so dark-fruited yet the wine tastes so fresh, like eating perfectly ripe blackberries right off the bush. It tastes like Bordeaux from another century, in the best way possible. Gentle yet substantial. Thoughtful yet easy drinking. Structured yet refreshing. This is what a gentle hand in the cellar can give you with a quarter century of Biodynamics in a cooler, more Atlantic, limestone-clay Bordeaux appellation like the Blaye. Violets, blackcurrants, and macerated rhubarb, pimento spice, and chalky minerality, all with supple tannins from a cooler fermentation and using only concrete. Unfined and unfiltered.

Cellar: Château Peybonhomme-les-Tours 2022 Blaye Côtes de Bordeaux Cuvée Classique is co-fermented whole-berry in cement with indigenous yeasts and gentle punch downs for cap management. Aged in concrete, it is unfined, unfiltered, with 40 ppm sulphur added.

Vineyard:  Château Peybonhomme-les-Tours 2022 Blaye Côtes de Bordeaux Cuvée Classique comes from estate vineyards at 70 meters altitude, biodynamic since 2000. The vines grow on clay limestone soils, farmed with natural treatments and care, and are bottled on a fruit day.
