Jean Pabiot & Fils
2023 Sancerre AOC La Merisière Sauvignon Blanc
Serve at around 12°C, alone or with simple pleasures such as oysters, a flaky white fish, or fresh goat’s cheese. Ready to drink now, it will also reward patience over the next 2 to 5 years. A truly charming Sancerre!
Region: Sancerre, Loire Valley
Appellation: Sancerre AOC
Varietal/Blend: 100% Sauvignon Blanc
ABV: 13.5%
Vineyard & Vine Age: Vinification takes place in stainless steel tanks under controlled temperatures, ensuring a slow and precise fermentation. The wine is then aged for six months on fine lees, with regular blending of parcels from different terroirs in the spring.
Cellar: La Merisière Blanc is grown on clay-limestone soils, sometimes dotted with pebbles and flint, in the villages of Chavignol and Sury-en-Vaux. The vines, on average, are 25 years old, giving the wine depth and aromatic complexity.
