Jean Pabiot & Fils

2023 Sancerre AOC La Merisière Sauvignon Blanc

There’s something really appealing about this Sancerre right away; it just feels open and expressive without trying too hard. You get that quiet sense of clay, limestone and flint in the background. The nose is fresh and lively, with citrus zest leading into crisp white fruits, and a smoky, flinty note that adds a bit of depth. On the palate, it carries that same energy, a little fuller, with ripe fruit and a clean mineral line running through it. It stays bright and balanced, with a lingering finish that keeps you coming back. It’s exactly the kind of wine you’d want with oysters, flaky white fish, or fresh goat’s cheese, simple dishes that let it do its thing.
