Cuvée Classique, Méthode Traditionnelle VMQ, Brut

This is a very Champagne-minded little number, built around 70% white juice gently pressed from red grapes, the old Blanc de Noirs trick, which gives it a touch more vinosity, length and fruit. The whole berries are gently pressed, and the best juice is selected, then they skip MLF to hang on to all that natural freshness. From there it’s the full traditional-method treatment: second fermentation in bottle, time on the lees, riddling and disgorgement. Dosage stays low at around 6 g/L, so the wine feels fresh and dry, but still nicely fruity, with a lovely little red-berry finish. Basically, a very convincing alternative to good non-vintage Champagne, without the Champagne price tag.
