Chardonnay Sainte Marie

This old-vine Chardonnay hails from the Sainte Marie vineyard in Roquetaillade, less than one hectare in size and one of the highest in the Aude, situated over 400m above sea level. This is a rich, robust, and silky Chard with a manifold citrus profile and a fine grained acid structure typical of the long hang time before harvest the altitude of this plot affords. Lightly oaked and beautifully poised, this wine is drinking right now with tertiary touches of toasted hazelnut already appearing. For the patient, all signs point to this wine developing gorgeously over three to five years in the cellar.

Vineyard & Vine Age:  Bull Swamp and Manilla vineyards in Baw Baw Shire. The vines were planted in 1961 and and 1964 respectively.

Cellar: For this wine, free-run juice from whole-cluster pressing is gravity fed into neutral 500L French oak demi-muids for indigenous yeast fermentation. Then, it ages nine months on fine lees with minimal bâtonnage, lightly plate filtered before bottling to preserve purity.

Vineyard:  From the high-altitude, old-vine Sainte Marie vineyard in Roquetaillade, this organic Chardonnay grows in clay-limestone soils under a cool Mediterranean climate. Hand harvested into 15kg crates, yields are limited to 30hl/ha for optimal concentration and freshness.
