A dark, brooding, fruit forward expression of this fascinating vineyard site, aged one year in stainless steel and a year in bottle, unencumbered by oak. Jumping from the glass you find stewed plum, the savoury licorice note of Dutch dropjes, with a savoury hint of barley and fresh picked button mushrooms. The palate follows on with deep rich notes of blueberry, plum, coffee, green peppercorn, and more pepper still spreading on the finish, calling for red meat like the Neanderthals that lived in the nearby caves not so long ago.

Ageing:  Aged one year in stainless steel. Several rackings were carried out before bottling, which took place in three stages between spring and summer 2021.

Vineyard & Vine Age:  Organic estate vineyards. Harvested at night and in the early morning. The proximity of these parcels to the cellars and transport being in small vibrating bins allow optimal respect for the fruit. In 2020 the harvest of the parcels concerned was spread out between September 17 and October 5.
