Quarticello - Neromaestri
Vinified as a fully red wine before finishing fermentation in the bottle for the bubbles. The deep, purple foam of the first pour stains the glass and reminds of Creme de Cassis. The nose is black liquorice, currant, blackberry leaf, smoked ham and dark cherry. A touch rustic, and not surprising given it’s varietal make up, there is a touch of tannin after a light perlage, followed by earthy notes, and a plea for pork fat. Cotechino??? A wine for chilling, but also for grilling!!
