The “concept” behind a rosé from Gippsland, if you could call it a concept, was to pay homage to the textural and structured rosés of more serious parts of the world, but with an instant pleasure and drinkability. Typically, Bill’s wines are about a sense of place, but this is more about being part of the party. It asks for attention without demanding it or distracting from the company you are enjoying!
