CHIUSA GRANDE

A very old method of production here, with he main interest being natural fermentation in carved stone vats sourced from limestone rocks on the properties. Some slight skin contact on the Trebbiano (approx. 12 hours) and a full ferment skin contact on the Pecorino. After full malolactic and alcoholic fermentation, the wines are naturally clarified through gentle decanting or racking. No additions or adjustments are made. No SO2 during any of these steps and below 40ppm at bottling, well below Organic standards. A truly unique and accurate product reflecting advancement and tradition. Oh, and it’s delicious!
